I'm just starting the boil on a batch of Sahti, the ancient juniper-flavored beer of the Finns. I used Wheat malt, bisquit malt, crystal malt and a **** load of juniper needles. I'm also trying to make 50 holiday tamales from scratch. I'm not smart enough to do both of these at the same time so some errors have occured. But as Papazian says "Hey, don't worry. Have a home brew." So I finally put my mead in bottles after two months of fermenting. Of course I tipped a glass to celebrate Thanksgiving. Wow! Strong stuff. Not sure how to judge the taste. I'll have to wait and let Will do that. Happy Thanksgiving to all. P
